E296 is the European Union designation for malic acid (chemically: 2-hydroxysuccinic acid or hydroxybutanedioic acid), a naturally occurring organic acid found in many fruits, especially apples, cherries, and grapes. As an approved food additive, it is primarily used as an acidity regulator, flavor enhancer, and pH-control agent. Malic acid can be obtained from natural sources or produced synthetically. The synthetic form typically exists as a racemate -- a mixture of two mirror-image forms (L- and D-malic acid) -- while the naturally occurring form is exclusively L-malic acid.

Natural Sources and Origin

Malic acid occurs widely in nature and is an intermediate in the citric acid cycle (Krebs cycle), a central metabolic pathway in the human body. It is found in particularly high concentrations in:

  • Apples and pears
  • Cherries and plums
  • Grapes
  • Gooseberries and currants
  • Rhubarb

For industrial use as a food additive, malic acid is predominantly produced through chemical synthesis from fumaric acid or maleic acid.

Malic acid is considered safe by the European Food Safety Authority (EFSA), with no established acceptable daily intake (ADI: not specified). The human body metabolizes malic acid naturally as part of the citric acid cycle. At normal dietary intake levels, no known health risks are associated with its consumption.

However, in very high amounts, malic acid may cause:

  • Irritation of the oral mucosa and gastrointestinal tract
  • Promotion of tooth demineralization when acidic products are consumed frequently
  • Mild laxative effects at very high doses

The use of E296 in certain product categories intended for infants and young children is restricted or not permitted, as the metabolic processes of young children may be more sensitive.
