Carob (Latin: Ceratonia siliqua) is the fruit of the carob tree, an evergreen tree belonging to the legume family (Fabaceae). Native to the Mediterranean region and the Middle East, the dried pods of the carob tree have been used for thousands of years as both a food source and a remedy. Today, carob is best known as a natural substitute for cocoa and chocolate and is widely used across the food industry.
Carob has a distinctive nutritional profile that sets it apart from other sweeteners and cocoa substitutes:
The health-promoting properties of carob are attributed to several bioactive compounds:
Carob is rich in polyphenols, particularly gallic acid, condensed tannins (proanthocyanidins), and flavonoids. These compounds act as antioxidants by neutralizing free radicals and thereby helping to prevent cellular damage. Studies suggest that polyphenols from carob also possess anti-inflammatory properties and may positively influence cholesterol levels.
The high fiber content of carob – comprising both soluble and insoluble fractions – supports a healthy gut microbiome. Soluble fibers act as prebiotics, nourishing beneficial gut bacteria. At the same time, the high fiber content can slow the rise in blood sugar levels after meals.
Locust bean gum is derived from the seeds of the carob fruit and is used as a thickener and stabilizer (food additive E 410) in the food industry. It consists mainly of the polysaccharide galactomannan, which has excellent gelling and thickening properties and is also high in dietary fiber.
Regular consumption of carob has been associated with several health benefits supported by clinical studies:
Carob is available in various forms and used in many different ways:
Carob is generally considered well tolerated and safe. Allergic reactions are very rare but possible, particularly in individuals with a legume allergy. Excessively high consumption may cause bloating or abdominal discomfort due to the high fiber content. Locust bean gum (E 410) has been evaluated by the European Food Safety Authority (EFSA) and is classified as GRAS (Generally Recognized As Safe) by the US FDA.
The health effects of carob have been the subject of numerous scientific studies. The evidence is well established for some areas – particularly cholesterol reduction and digestive health. For other areas, such as cancer prevention or antidiabetic effects, further large-scale clinical trials are needed before definitive recommendations can be made.
