Allicin ist eine biologisch aktive Schwefelverbindung, die entsteht, wenn frischer Knoblauch geschnitten oder zerdrückt wird.
Beim Zerdrücken oder Schneiden von Knoblauch reagiert die inaktive Vorstufe Alliin mithilfe des Enzyms Alliinase zu Allicin – einer Substanz mit starkem Geruch und intensiver antimikrobieller Wirkung. Allicin ist hitzeempfindlich und in rohem Knoblauch am wirksamsten. Es gilt als Hauptwirkstoff für viele der gesundheitsfördernden Eigenschaften von Knoblauch.
Zahlreiche Studien belegen, dass Allicin gegen Bakterien, Viren, Pilze und Parasiten wirkt. Es hemmt unter anderem das Wachstum von Helicobacter pylori, Candida albicans und multiresistenten Keimen. Darüber hinaus werden entzündungshemmende, blutdrucksenkende und cholesterinsenkende Effekte beschrieben. Allicin unterstützt das Herz-Kreislauf-System, stärkt das Immunsystem und kann zur Prävention von Infektionen beitragen.
Die optimale Wirkung entfaltet Allicin, wenn frischer Knoblauch nach dem Zerkleinern 2–5 Minuten ruht, bevor er erhitzt wird. So kann sich das Enzym Alliinase vollständig entfalten. Alternativ sind auch Knoblauchextrakte oder Allicin-Kapseln sinnvoll.
