Buchweizen ist von Natur aus glutenfrei und damit besonders gut geeignet für Menschen mit Zöliakie oder Glutensensitivität. Es enthält hochwertige pflanzliche Proteine, viele Ballaststoffe, Mineralstoffe wie Magnesium, Zink, Mangan sowie das antioxidative Flavonoid Rutin, das gefäßschützend und entzündungshemmend wirkt.
In der Naturheilkunde wird Buchweizen insbesondere bei Venenproblemen, Bluthochdruck, Kapillarbrüchigkeit und zur Stärkung des Bindegewebes empfohlen, insbesondere aufgrund seines hohen Rutin-Gehalts. Zudem unterstützt der regelmäßige Verzehr eine ausgewogene Blutzuckerregulation, was ihn für Diabetiker interessant macht. Die komplexen Kohlenhydrate werden langsam verstoffwechselt und sorgen für langanhaltende Sättigung.
In der Küche wird Buchweizen sehr vielseitig eingesetzt. Er lässt sich als Beilage, in Bratlingen, Pfannkuchen, Suppen, Porridge oder als glutenfreies Mehl verwenden. Besonders beliebt sind auch gekeimte Buchweizenkörner in Müslis oder Smoothie-Bowls. Beim Kochen sollte Buchweizen vorher gut abgespült und ggf. kurz eingeweicht werden, um Bitterstoffe zu reduzieren.
