Galactose ist ein einfacher Zucker (Monosaccharid), der strukturell eng mit Glukose verwandt ist.
Galactose kommt natürlicherweise in der Milch und Milchprodukten vor, meist in Form von Laktose (Milchzucker), die aus einem Molekül Glukose und einem Molekül Galactose besteht. Im Körper spielt Galactose eine wichtige Rolle im Energiestoffwechsel, bei der Zellkommunikation und als Baustein von Glykoproteinen und Glykolipiden, die für die Zellstruktur und das Immunsystem entscheidend sind.
Nach der Aufnahme im Darm wird Galactose in der Leber zu Glukose umgewandelt, die dann als Energiequelle dient. Sie hat einen niedrigen glykämischen Index, was bedeutet, dass sie den Blutzuckerspiegel langsamer ansteigen lässt als Glukose. Das macht Galactose auch für Personen interessant, die auf Blutzuckerschwankungen empfindlich reagieren. In der Medizin und Forschung wird Galactose teilweise als alternativer Energieträger untersucht, insbesondere für Gehirnzellen, die auf konstante Energiezufuhr angewiesen sind.
Eine seltene Stoffwechselstörung, die sogenannte Galactosämie, verhindert die korrekte Umwandlung von Galactose in Glukose. Betroffene müssen galactosehaltige Lebensmittel strikt meiden, um Leber-, Nieren- und Nervenschäden zu verhindern. Für gesunde Menschen ist Galactose in moderaten Mengen jedoch gut verträglich und kann durch den Verzehr von Milchprodukten, Hülsenfrüchten und bestimmten Gemüsesorten aufgenommen werden.
