Ketone sind organische Verbindungen, die durch eine Carbonylgruppe (C=O) charakterisiert sind, die innerhalb einer Kohlenstoffkette liegt.
Ketone gehören zu den wichtigsten funktionellen Gruppen der organischen Chemie und entstehen häufig als Zwischenprodukte beim Abbau von Fettsäuren und Kohlenhydraten. Die allgemeine Strukturformel lautet R–CO–R', wobei R und R' organische Reste sind. Bekannte Vertreter sind Aceton (Propanon) und Butanon, die als Lösungsmittel und Zwischenprodukte in biochemischen Prozessen dienen.
Im menschlichen Stoffwechsel spielen Ketone vor allem im Zusammenhang mit der Ketogenese eine Rolle: einem Prozess, bei dem in der Leber sogenannte Ketonkörper gebildet werden. Diese dienen dem Körper, insbesondere dem Gehirn und den Muskeln, als alternative Energiequelle, wenn die Glukoseverfügbarkeit gering ist, etwa während Fasten, Low-Carb-Ernährung oder intensiver körperlicher Belastung. Zu den physiologisch relevanten Ketonkörpern gehören Acetoacetat, β-Hydroxybutyrat und Aceton.
Ketone finden in Medizin, Industrie und Forschung vielfältige Anwendung. Sie werden als Lösungsmittel, Rohstoffe für Kunststoffe, Pharmawirkstoffe oder Aromastoffe genutzt. Zudem rückt ihre Bedeutung in der Ernährungsmedizin zunehmend in den Fokus – etwa im Rahmen der ketogenen Ernährung, die durch erhöhte Ketonkörperbildung zur Energieversorgung beiträgt und potenziell positive Effekte auf Stoffwechsel, Gehirnleistung und Fettverbrennung hat.
