Neotame (EU food additive number: E961) is an artificial sweetener belonging to the group of high-intensity sweeteners. It is a derivative of the well-known sweetener aspartame, but has been chemically modified to provide a significantly greater sweetening power. Neotame is approximately 7,000 to 13,000 times sweeter than table sugar (sucrose) and is therefore needed only in very small amounts. In the European Union, neotame is approved as a food additive and may be used in a wide range of foods and beverages.
Chemically, neotame is an N-neohexyl derivative of aspartame. Despite its structural similarity to aspartame, neotame is not metabolized into phenylalanine in the body. This makes it potentially safer -- unlike aspartame -- for individuals with phenylketonuria (PKU), although individual medical advice is still recommended.
Its sweetening effect results from the highly specific binding to sweet taste receptors (T1R2/T1R3) on the tongue. Because it is used in extremely small quantities and undergoes minimal metabolism, neotame provides virtually no calories.

In the European Union, foods containing neotame must declare this additive in the ingredient list either by its name Neotame or by its designation E961. Unlike aspartame, neotame does not require a special warning label for individuals with PKU under current EU regulations.
