Stearidonic acid (SDA) is a polyunsaturated fatty acid belonging to the omega-3 family. Its chemical designation is 18:4(n-3), meaning it has an 18-carbon chain with four double bonds. SDA acts as an important intermediate in the omega-3 metabolic pathway, bridging the gap between the plant-derived alpha-linolenic acid (ALA) and the longer-chain, biologically active omega-3 fatty acids EPA (eicosapentaenoic acid) and DHA (docosahexaenoic acid).

In human metabolism, alpha-linolenic acid (ALA) is converted to stearidonic acid by the enzyme delta-6-desaturase. This step is the rate-limiting step of omega-3 conversion and is notably inefficient in humans. Because SDA bypasses this bottleneck, it is converted to EPA considerably more efficiently than ALA.
Studies indicate that the conversion rate of SDA to EPA in humans is approximately 17–30% – significantly higher than the typical ALA-to-EPA conversion rate of less than 5%. However, the subsequent conversion to DHA remains limited.

There are currently no official dietary reference values specifically for stearidonic acid from bodies such as the WHO or EFSA. In clinical studies, SDA-enriched plant oils have been used in amounts of 5–10 g of SDA per day to achieve a measurable increase in blood EPA levels. Intake is ideally taken with a fat-containing meal to enhance absorption.
