Stevia ist ein natürlicher Süßstoff, der aus den Blättern der südamerikanischen Pflanze Stevia rebaudiana gewonnen wird.
Die süßenden Inhaltsstoffe, insbesondere Steviosid und Rebaudiosid A, gehören zur Gruppe der Steviolglycoside und sind bis zu 300-mal süßer als Zucker, dabei jedoch kalorienfrei. Stevia gilt als zahnfreundlich, beeinflusst nicht den Blutzuckerspiegel und ist daher besonders beliebt bei Menschen mit Diabetes, Insulinresistenz oder kohlenhydratreduzierter Ernährung.
Im Gegensatz zu künstlichen Süßstoffen stammt Stevia aus einer natürlichen Quelle und ist in der EU seit 2011 als Lebensmittelzusatzstoff E 960 zugelassen. Es findet Verwendung in Zahnpflegeprodukten, Getränken, Joghurts, Backwaren und Nahrungsergänzungsmitteln. Wichtig bei der Anwendung ist die richtige Dosierung: Reines Steviosid hat einen leicht bitteren Nachgeschmack, weshalb es häufig in Kombination mit Erythrit, Inulin oder Xylit verwendet wird. Der Geschmack und die Süßkraft hängen stark vom Reinheitsgrad und der Formulierung ab.
Neben der Funktion als Zuckerersatz wird Stevia auch wegen seiner antioxidativen und blutdrucksenkenden Potenziale erforscht. Studien deuten darauf hin, dass Stevia positive Effekte auf Blutfettwerte, Entzündungsmarker und die Lebergesundheit haben kann. Als natürlicher Bestandteil funktioneller Lebensmittel wird es in der gesundheitsbewussten Ernährung zunehmend geschätzt – auch im Rahmen ketogener oder kalorienreduzierter Diäten.
