Preparation
- Peel the garlic cloves, place in a small pan with the rosemary and thyme sprigs and add enough olive oil to cover the garlic.
- Heat slowly over a medium heat until the blossoms rise, reduce the heat a little and cook gently for 30-40 minutes until the garlic has colored and is completely soft.
- Cool the confit garlic, pour into a clean jar and seal well - keeps for several weeks in the fridge.
