Species-appropriate sweet potato quiche

A wonderful alternative to the classic quiche lorraine: our sweet potato quiche! This healthy and delicious feast for the eyes is a must for every vegetarian.

Ingredients (for 1 springform pan ø approx. 26 cm)

  • Artisan pastry:
  • 200 g ground almonds (blanched)

  • 1 EL Tapioca starch (also known as tapioca flour)

  • 3 EL Olivesöl, e.g. B. PHENOLIO

  • 1 Egg

  • 1 Prise Salt

  • Füllung:
  • 2 Süßpotatoes (approx. 500 g)

  • 1 Leek/Porrée

  • 1 EL Olivesöl, e.g. B. PHENOLIO

  • 2 Red onions

  • 4 Eggs

  • 100 ml Cashew or almond drink

  • Nutmeg, grated

  • Salt

    Pepper

  • 50 g Hazelnuts, coarsely chopped

Preparation

  • Preheat the oven to 150° C fan oven.
  • For the dough, mix the ground almonds, tapioca starch, olive oil, an egg and salt and knead into a dough with your hands. If the dough is too dry, add a little ice-cold water.
  • Line the base of a springform tin with baking paper and brush the sides of the tin with a little olive oil. Press the pastry evenly into the tin with your hands and press the edges approx. 3 cm high.
  • Pre-bake the dough in the oven for 15 minutes. Then turn the oven up to 165° C.
  • In the meantime, peel the sweet potatoes and cut into thin slices. Clean the leek and cut into rings. Peel the onions and cut into wedges. Heat 1 tbsp olive oil in a deep pan and sauté the leeks and onions for 2-3 minutes.
  • Mix the eggs with the cashew drink and season to taste with nutmeg, salt and pepper.
  • Spread the sweet potatoes, leek and onions over the pre-baked base and pour the egg mixture on top. Finally, sprinkle the hazelnuts over the quiche and bake in the oven at 165° C for approx. 45 minutes.

    Our sweet and savory potato quiche is a wonderful alternative to the classic quiche lorraine: healthy, delicious and vegetarian.

    Almonds have a high calorie density, but are very healthy. The carbohydrates in almonds and also in nuts are only released slowly during digestion. Almonds contain a lot of vegetable protein and are rich in polyunsaturated fats. They also have an antioxidant effect.

    Olivesöl are a natural source of fat and therefore an important source and store of energy. PHENOLIO rounds off the dish with its fresh, fruity and tangy flavor. It also has a very high content of polyphenols, which have a health-promoting, anti-inflammatory and beneficial effect.

    Eggs are a great source of protein and have a firm place in a species-appropriate diet. They are also a good source of healthy omega-3 fatty acids and contain numerous vitamins such as vitamins A, B, D and E. (Please note: animal products are only species-appropriate if the animal has also been kept and fed in a species-appropriate manner.)

    Süßkartoffeln belong to the tuber vegetables and are rich in beta-carotene, which the body needs to produce vitamin A. We need vitamin A for our skin, eyes, immune system and cell protection. However, for this to be soluble, it should be consumed with a little fat. Sweet potatoes also contain plenty of vitamin E and fiber.

    The nutmeg is both a spice and a remedy - numerous antioxidant ingredients protect our body against inflammation and have a calming effect on the gastrointestinal tract.

    Hazelnutsüsse are rich in vitamins (B, E) and provide important minerals. They have a positive effect on cholesterol levels, the heart, blood vessels and circulation, can improve memory and lower cholesterol levels.
