Ingredients

  • Chocolate cream
  • 130 g Dark chocolate (80 %)

  • 230 g Coconut milk from a can

  • 1 1 Prise Cinnamon and cardamom

  • 4 Dried apricots

  • 2 TL MANUKA

  • 30 g Almond flour

  • Abrasion of an orange

  • Pistachio cream
  • 120 g Coconut milk from a can

  • 50 g Pistachio cream

Preparation

  • Roughly chop the dark chocolate and melt over a bain-marie.
  • Heat the coconut milk gently in a separate pan and stir in the melted chocolate until you have a smooth ganache.
  • Remove from the heat and stir in the orange zest, spices and almond flour. Add the honey and finally mix in the finely chopped apricots. Fill the chocolate cream into a piping bag.
  • For the pistachio cream, mix the cold coconut milk with the pistachio cream and pistachio flour until well combined. Also place in a piping bag.
  • In dessert glasses or dishes, alternate between a layer of chocolate cream, a layer of pistachio cream and another layer of chocolate cream.
  • Decorate with chopped pistachios and keep in the fridge until ready to serve.
  • Serve the cauliflower steaks with herb crust together with the spicy red cabbage salad as a colorful, satisfying main course.
