This celery soup warms from the inside and is not only good for our soul, but also for the gut! A simple, quick recipe. RESET suitable.

INGREDIENTS

  • 1 kg Celeriac

  • 4-5 Shallots or onions

  • 2< /span/span> EL Olivenöl

  • Pepper, salt

  • 1 Liter Water or Gemüsebrühe

  • 1 Prise Muscat

  • 1 Organic lemon (juice + zest)

  • 1 Msp Cayenne pepper

  • 2 säuerliche Äpfel

  • 4 EL Ghee (clarified butter).clarified butter, clarified butter)

  • 10 twigs fresh thyme or 2 tsp dried

Preparation

  • Peel the celeriac and cut into approx. 1 cm cubes. Dice the shallots. Heat the oil in a pan, briefly sauté the celeriac and shallots in it. Add a strong pinch of salt and pepper and pour in water/ vegetable stock. Cook with the lid closed for 10 minutes.
  • In the meantime, remove the seeds from the apples, cut into fine wedges and immediately drizzle with a little lemon juice. Pluck the thyme leaves.
  • Melt the ghee in a pan. Fry the apple slices + thyme in it for 2-3 minutes. Add the lemon zest, season with salt.
  • Puree the soup and season with nutmeg, a little lemon juice.strong>lemon juice, cayenne pepper and salt to taste and serve with apple and thyme.

Notes

  • TIP: The soup can be refined with a little coconut milk.
