2 medium-sized onions

1 EL PHENOLIO Olivenöl
1 TL Thymes, dried, or 4-6 fresh stems
700 ml Water
100 ml Almond drink or coconut drink to taste
2 EL Cashew butter or almond butter

Pepper
1 EL chopped parsley
Preparation
- Clean and chop the mushrooms.
- Finely dice the onions and garlic and sauté in a pan with the olives until translucent. Add the mushrooms and thyme and fry until the mushrooms are lightly browned. Season with salt, remove a small portion of the mushrooms and set aside for the topping.
- Pour water and almond or coconut drink over the mushrooms and simmer for 10-15 minutes with the lid on. Then add the cashew butter and blend the soup until smooth.
- Season to taste with salt and pepper and garnish with the remaining sautéed mushrooms and chopped parsley.
