Ingredients

  • Burger buns:
  • 300 g Shelled almonds

  • 6 Eggs

  • 2 TL Salt

  • 3 TL light vinegar

  • 1 EL Tapioca

  • Marinated portobello mushroom:
  • 4 Portobello mushrooms

  • 2 Garlic cloves, finely chopped< /span/span>

  • 2 TL MANUKA honey

  • 1 EL PHENOLIO olivesöl

  • 1 EL Vinegar

  • 1 TL Smoked paprika powder

  • 1 TL Salt

  • Italian herbs

  • Sauce:
  • 100 ml PHENOLIO olivesöl

  • 1 Yolk

  • 1 level tsp Salt

  • 1 TL Lemon juice or vinegar

  • 1 EL Tomato pulp

  • 1 EL Onion, roughly chopped

  • 1 strong pinch smoked paprika powder or chili to taste

  • Pepper

  • Italian herbs

  • Therefore:
  • 4 Salad leaves

  • 1 large tomato

Preparation

  • Preheat the oven to 200° C.
  • Für the burger buns: Separate the eggs, set one yolk aside.
    Beat the egg whites until stiff, then add the salt, vinegar and tapioca starch and continue to beat until smooth and stiff. Now carefully fold in the ground almonds. The dough should be soft and airy. Divide the dough into 4 parts and shape into balls with moistened hands. Place on a baking tray lined with baking paper and press down slightly. Bake in the oven for 15-20 minutes until the buns are golden brown. Then remove from the oven and leave to cool slightly.
  • The portobello mushrooms: In a small bowl, mix together the honey, garlic, olives, oil, vinegar, smoked paprika powder, salt and Italian herbs. Turn the mushrooms in the marinade a little at a time and place on a baking tray lined with baking paper with the opening facing downwards. (Remove the stems from the mushrooms if necessary.) Drizzle the rest of the marinade over the mushrooms and bake in the preheated oven for approx. 15 mins.
  • For the sauce: For the mayonnaise base, whisk an egg yolk with lemon juice or vinegar and salt in a tall bowl using a hand blender. Slowly add the oil in a fine stream and mix until the ingredients are combined. Puree the roughly chopped onion and tomato purée in a separate container and stir into the mayonnaise. Season with smoked paprika powder, chili, salt, pepper and Italian herbs.
  • Wash the lettuce and pat dry. Cut the tomato into slices. Cut open the burger buns and top each burger with lettuce, tomato, sauce and the portobello mushroom.

Tomato: The riper the tomato, the healthier it is. The best tomatoes are fully ripe tomatoes that have been harvested when ripe and not tomatoes that have been harvested unripe and have only ripened. In winter, it can therefore make sense to use ripe tomatoes in jars. Tomatoes belong to the nightshade family.
