These blueberry muffins always work and are perfect for any occasion. Our recipe is not only moist and delicious, but also RESET-friendly and gluten-free.

Ingredients

  • 1 EL Coconutöl, e.g.E.g. COCOCO

  • 2 EL Honey, e.g.E.g. MANUKA

  • 150 g Coconut yogurt

  • 1 Prise Salt

  • Vanilla pulp from ½ vanilla pod

  • 1 gestr. EL Coconut flour

  • 100 g Ground almonds, blanched

  • 150 g< /span/span> Blueberries

Preparation

  • Preheat the oven to 160°C convection.
  • Pour the eggs into a bowl;whisk the eggs in a bowl – gradually adding the coconut and honey. Stir in the coconut yoghurt, a small pinch of salt and the vanilla paste.
  • Mix the coconut flour and almonds and fold into the batter. Finally, mix in the blueberries.
  • Pour into muffin tins lined with baking paper and bake for 20-25 minutes. Serve lukewarm or chilled.

Almonds have a high calorie density, but are very healthy. The carbohydrates in almonds and also in nuts are only released slowly during digestion. Almonds contain a lot of vegetable protein and are rich in polyunsaturated fats. They also have an antioxidant effect.

Berries help to build up our protective barriers. Their polyphenol content has an anti-inflammatory effect and the secondary plant substances they contain have an antioxidant effect. They are also the epitome of summer and their bright color on the plate ensures a good mood.
