Preparation
- Preheat the oven to 160°C convection.
- Pour the eggs into a bowl;whisk the eggs in a bowl – gradually adding the coconut and honey. Stir in the coconut yoghurt, a small pinch of salt and the vanilla paste.
- Mix the coconut flour and almonds and fold into the batter. Finally, mix in the blueberries.
- Pour into muffin tins lined with baking paper and bake for 20-25 minutes. Serve lukewarm or chilled.
