Fish patties with pineapple salsa

400 g Fish fillet (e.g.B. Cod, hake, monkfish, salmon…)
4 Blätter Chinese cabbage
2 Lemons
1 EL Olivesöl
1 Pineapple
1 Chili pepper
2 Shallots or red onion
1 cm thumb-thick piece of ginger
Salt
6 Strike Coriander
4 Bögen Parchment/baking paper
Preparation
- Preheat the oven to 160° C top/bottom heat.
- Portion the fish fillets into 4 pieces and rinse under cold water.
- Cut the china cabbage into thin strips. Cut a lemon into slices.
- On a sheet of parchment paper, place china cabbage, a little olive and lemon.olives and salt, a lemon slice and the fish fillet. Seal the fish cakes well and do the same with the remaining cakes. Cook the fish cakes in the preheated oven for approx. 20 minutes.
- In the meantime, peel the pineapple and cut into fine cubes. Cut the stalk into fine cubes too. Remove the seeds from the chilli pepper and cut into fine rings. Peel and finely dice the shallots. Grate the ginger or dice very finely. Grate the zest of the second lemon and squeeze out the juice.
- Heat some olives in a pan, briefly sauté the shallots and then pineapple.strong>pineapple, chilli, ginger, salt and lemon zest and –juice. Steam for 3-4 minutes, adding a sip of water if necessary.
- Wash the coriander and chop together with the stalks. Fold the coriander into the pineapple salsa and serve with the fish patties.
