Vegetable buffer with smoked trout and wild herb salad

600 g Root vegetables (mullein, parsley root, parsnip)
2 Trout fillets
2-3 Spring onions
4 Stalks Parsley
4 Stalks Dill
3 Eggs
1 TL Salt
1 Prise Muscat
1 Msp. Cayenne pepper
1/2 TL Fenugreek seeds, ground
1 TL coconut flour or locust bean gum
2 EL Olivesöl or ghee

1 EL White vinegar, alternatively lemon juice

Preparation
- For the buffer, peel the root vegetables and grate coarsely into a bowl.
- Cut the spring onions into fine strips. Finely chop the parsley.
- Combine everything with eggs, nutmeg, salt, salt and salt.strong>salt, cayenne pepper and ground fenugreek seeds and coconut flour.
- Heat the olive oil or ghee in a pan. Using a tablespoon, place small portions of vegetable pancakes in the pan, flatten slightly and fry slowly on both sides until golden brown. Remove the finished pancakes and keep warm in the oven. Continue in this way until all the pancakes are cooked.
- For the venison salad, make a dressing from olive oil, vinegar and salt and mix with the washed salad.
- Gemüsepuffer with dill tips, smoked trout, freshly ground pepper and wild herb salad.

- TIP: The vegetable buffers also taste delicious lukewarm or cold.
