A simple recipe for species-appropriate bread. Delicious, moist and keeps fresh for a long time. Now you can also enjoy bread during RESET!

200 g Chestnut flour
200 g Ground almonds

1 TL Salt
4 EL Olivesöl, e.g. E.g. PHENOLIO
2 TL bright vinegar
1 EL Weight

Preparation
- Preheat the oven to 180° C fan.
- Separate the eggs and beat the egg whites into egg whites. Add the egg yolks, chestnut flour, ground almonds, salt, olives, vinegar and chestnut flour.vinegar and spices and 1-2 tbsp water, mix well with a wooden spoon or whisk until a thick batter forms.
- Stir 1/3 of the whipped egg whites into the batter until everything is mixed together. The dough is relatively firm and becomes fluffier as you stir in the beaten egg whites. Gradually fold the remaining beaten egg whites into the batter.
- Line a 26-28 cm loaf tin with baking paper or brush with a little olive oil and pour the dough into the tin. Place the bread in the oven together with a small ovenproof dish filled with water. Bake for 45-50 minutes.
- The bread is done when no more dough sticks to the pan when tested. If this is the case, bake for another 5-10 minutes. Then remove from the oven and leave to cool.

Spices generally have an anti-inflammatory effect, stimulate the metabolism and can regulate insulin levels. They are a great way to integrate food diversity into your daily diet. Their intense smell and taste stimulate the appetite when cooking, but also lead to a quicker feeling of satiety when eating.
