500 g Parsnips or parsley roots. Parsley roots
2 EL Olivenöl
1 Lemon (juice and 1 tsp zest)
1 Garlic clove
500 g Yoghurt (unsweetened)ter coconut, cashew, almond yogurt)
1 Msp. Cayenne pepper
Salt, pepper
4 hard-boiled eggs
Preparation
- Preheat the oven to 180° C top/bottom heat. Peel the parsnips and halve or quarter them, depending on their size. Mix with olives, juice of half a lemon, salt and pepper and place on a baking tray. Bake for around 20 – 30 minutes until cooked and lightly browned, turning occasionally.
- Meanwhile, pick, wash and spin dry the herbs. Finely chop one half of the herbs. Place the other half in a tall container, press in the garlic and blend together with the yoghurt and cayenne pepper. Fold in the remaining chopped herbs, grate in the lemon zest and season with a little lemon juice, salt and pepper.
- Grüne Serve the sauce with the hard-boiled eggs and oven parsnips.
Notes
- TIP: For a milder garlic flavor, briefly sauté the garlic with a little oil.
