A light, fruity dessert variation of the classic panna cotta – with yoghurt, species-appropriate strawberry collagen and fresh berries. Collagen strawberry panna cotta

1 EL Gelatine powder
150 ml Water (100 ml boiling, 50 ml cold)
160 g Yogurt
1 EL Honey
4 fresh strawberries
Preparation
- In a bowl, pour 100 ml boiling water over the gelatine powder and collagen. Stir with a whisk until everything has completely dissolved.
- Now stir in the remaining 50 ml of cold water. Allow the mixture to cool slightly (it should no longer be hot, but still liquid).
- Add the yoghurt (and optionally the honey) and whisk until you have a smooth, even cream.
- Pour into 3 small glasses or dessert bowls. Leave to set in the fridge for at least 3 hours, preferably overnight.
- Garnish with fresh strawberry slices before serving. Optionally top with mint or some berry powder.
