Marinated green asparagus with fish

2 EL Olivesöl
1 Lemon
1 TL dark honey
Salt, pepper
600 g Fish fillet (e.g. salmon, arctic char).e.g. salmon, arctic char, cod…)
Preparation
- Preheat the oven to 160 °C convection.
- Wash the asparagus, peel the bottom third and cut off the woody ends.
- For the asparagus marinade, peel and finely chop the garlic. Remove the seeds from the chilli pepper and chop finely. Add the garlic, chilli pepper, olives, juice of one lemon, honey, salt and pepper and mix with the asparagus.
- Wash the fish in cold water, pat dry and place in a large casserole dish. Place the asparagus in the dish with the fish, pour the rest of the marinade over it, season the fish with a little salt and cook in the oven for approx. 20 minutes. (The cooking time may vary depending on the thickness of the fish fillet and the asparagus spears.)
