1 Cucumber
1 Lime
1 EL Sushi ginger (approx. 40 g)
1-2 Red chili at will
1 TL MANUKA honey (optional)
2 EL bright balsamic vinegar
4 EL PHENOLIO olivesöl
Preparation
- Place the sea spaghetti in a bowl, cover with cold water and leave to soak for 15 minutes or according to the instructions on the packet. Then drain the water and squeeze out the seaweed. In the meantime, wash the cucumber and peel it into strips all around with a peeler.
- Squeeze the lime. Cut the ginger into fine strips. Deseed the chilies and cut into fine strips. For the vinaigrette, mix together the lime juice, ginger, chilli, honey, vinegar and olive oil.
- Mix the soaked sea spaghetti and cucumber strips with the vinaigrette, season with salt and leave to marinate for at least 10 minutes.

- Serve with coriander leaves if desired.

Sea spaghetti are brown algae and are particularly popular in the raw food kitchen. In Germany they are also known as Riementang. Algae can break down toxins in our bodies and contain high amounts of vitamins, trace elements and minerals with good bioavailability. Chilis contain capsaicin, which has very positive properties on blood sugar levels, blood clotting and the defense against free radicals.
Honey has been considered a natural remedy for thousands of years and is known for its effect against pathogens such as viruses and bacteria. Manuka honey works best here – its high methylglyoxal content (MGO) makes it unique. In general, the darker the honey, the better, as the pinostrobin content is then higher.
Vinegar has a probiotic effect. However, it is important to ensure that it is of good quality - vinegar should not have been heated, otherwise it will not have a probiotic effect.
Olivesöl are a natural source of fat and therefore an important source and store of energy. In addition, high-quality olive oil has a very high content of polyphenols, which have a health-promoting, anti-inflammatory and protective effect.
