This bowl is super refreshing and light. With roasted cauliflower, marinated cucumber and tahini sauce. Easy to make and, as always, RESET suitable.

Ingredients

  • 400 g Cauliflower

  • 2 EL Coconut or olive oil, e.g.E.g. COCOCO

  • 1 EL Curry powder

  • 1/2 TL Salt

  • 2 Eggs

  • 1/2 Cucumber

  • 1 Garlic clove

  • 1 TL Sesamöl

  • 2 Handful Mixed salad/ herbs

  • 10-15 red grapes

  • 2 TL span class=""wpzoom-rcb-ingredient-name"">Sushi ginger or kimchi

  • EL Curry paste (yellow or green, not too hot)

  • 2 EL Tahini

  • 1-2 EL Lime juice

  • Salt, pepper

Preparation

  • Preheat the oven to 200°C top and bottom heat.
  • Cut off the cauliflower circles and place in a bowl of cabbage.Mix in a bowl with &oum;l, curry powder and salt. Place on a baking tray lined with baking paper and bake until golden brown, crispy on the outside and soft on the inside.
  • In the meantime, hard-boil the eggs and rinse in cold water. Peel, rinse and finely dice the garlic. Wash the cucumbers and flatten them whole until they break, e.g. with a flat plate or small board. Cut the broken cucumber into bite-sized pieces and mix with garlic, a little salt and sesame seeds. Leave to marinate for a few minutes.
  • Wash and roughly chop the lettuce and herbs. Wash and halve the grapes.
  • For the dressing, mix the curry paste with tahini, lime juice, salt and pepper. Add enough water to achieve a creamy consistency.
  • Combine the steamed cauliflower with the marinated cucumbers, lettuce, herbs, grapes, eggs, ginger and serve with the dressing.

Red grapes are a species-appropriate fruit that should be purchased in good quality, as pesticides are often used in traditional cultivation.

Lettuce as a green leafy vegetable is an essential part of a species-appropriate diet. It contains bitter substances that regulate our immune system, chlorophyll and other secondary plant substances that provide our cells with more energy and protect them from free radicals. In addition, fiber, which our intestinal bacteria use as food.

Sesame seeds are seeds, but in smaller quantities they can be used in species-appropriate cuisine due to their good fatty acids.

Fermented ginger/ kimchi has a probiotic effect and has many health benefits due to fermentation.
