Rosemary crackers with aioli and tomato dip

Crispy crackers with two types of dip. Perfect for nibbling – whether on a series evening or a picnic.

Ingredients

  • Cracker
  • 200 g Ground almonds (blanched)

  • 2 Branches Rosemary

  • 1 EL PHENOLIO olivesöl

  • 1 White;

  • coarse salt

  • Aioli
  • 2 Garlic cloves

  • 1 Yolk

  • 1 EL Lemon juice

  • 150 ml PHENOLIO Olivenöl

  • Salt, pepper

  • Summer tomato dip
  • 2-3 large tomatoes (approx. 300 g)

  • 2 süße apricots

  • 1 cm Ginger (approx. 10 g)

  • 1 TL bright vinegar

  • 1/2 TL span class=""wpzoom-rcb-ingredient-name"">smoked paprika powder (mild or hot, depending on taste)

Preparation

  • Preheat the oven to 160° convection.
  • Mix the ground almonds with the egg white, chopped rosemary, semolina and semolina.strong>rosemary, a pinch of salt and olive oil and knead into a dough with your hands. If the dough is too dry, add a little water.
  • Form a ball and roll it out thinly between two sheets of baking paper. Carefully remove the top sheet of baking paper and sprinkle the dough with coarse salt and press down a little. Cut the dough into the desired cracker shape with a knife and bake in the preheated oven for 7-10 minutes until lightly browned. Leave to cool slightly before separating them along the cut edges.
  • Aioli
  • Peel and roughly chop the garlic cloves. Place the egg yolk together with the garlic, lemon juice, salt and pepper in a tall container and blend with a hand blender.
  • Add the olive oil slowly while blending until a creamy consistency is achieved. Season with salt if necessary. As it contains raw egg yolk, aioli must be kept in the fridge.
  • Tomato dip
  • Finely mix all the ingredients and season with salt and possibly a little honey.
