a small pinch of salt 3 EL MANUKA honey (for the dough)
2 whole eggs
2 Egg yolk
2 TL MANUKA honey (for the little fish)

Preparation
- Preheat the oven to 120° C.
- Bring the almond drink to the boil in a pan. Add the saffron and salt and leave to infuse for a few minutes. Remove from the heat and leave to cool slightly.
- Whisk the eggs and egg yolks in a bowl, add the slightly cooled almond milk and 3 tbsp honey and stir well.
- Place 1/2 tsp of manuka honey in the bottom of each of four ovenproof ramekins and carefully pour the flan mixture into the ramekins.
- Fill a deep baking tray with boiling water and place the flans in it. Bake in the oven at 120° C for 45 minutes. Check with a knife to see if the mixture has already set, otherwise leave in the oven for another 10-15 minutes if necessary. Then remove the pancakes from the oven and leave to cool completely.
- Carefully scrape the flan off the edge of the pastry with a knife and transfer to a plate. Garnish with the raspberries.

Manuka honey works best here – its high methylglyoxal content (MGO) makes it unique. In general, the darker the honey, the better, as the pinostrobin content is then higher.
Eggs are a great source of protein and have a firm place in a species-appropriate diet. They are a good source of healthy omega-3 fatty acids and contain numerous vitamins, such as vitamins A, B, D and E. Berries help to build up our protective barriers. Their polyphenol content has an anti-inflammatory effect and the secondary plant substances they contain have an antioxidant effect. They are also the epitome of summer and their bright color on the plate ensures a good mood.
