Ingredients

  • 0.2 g Safranfäden

  • 1 a small pinch of salt

  • 3 EL MANUKA honey (for the dough)

  • 2 whole eggs

  • 2 Egg yolk

  • 2 TL MANUKA honey (for the little fish)

  • Fresh berries, e.g. raspberries

  • . e.g. raspberries

Preparation

  • Preheat the oven to 120° C.
  • Bring the almond drink to the boil in a pan. Add the saffron and salt and leave to infuse for a few minutes. Remove from the heat and leave to cool slightly.
  • Whisk the eggs and egg yolks in a bowl, add the slightly cooled almond milk and 3 tbsp honey and stir well.
  • Place 1/2 tsp of manuka honey in the bottom of each of four ovenproof ramekins and carefully pour the flan mixture into the ramekins.
  • Fill a deep baking tray with boiling water and place the flans in it. Bake in the oven at 120° C for 45 minutes. Check with a knife to see if the mixture has already set, otherwise leave in the oven for another 10-15 minutes if necessary. Then remove the pancakes from the oven and leave to cool completely.
  • Carefully scrape the flan off the edge of the pastry with a knife and transfer to a plate. Garnish with the raspberries.

Almond drink: Almonds have a high calorie density, but are very healthy. The carbohydrates in almonds and also in nuts are only released slowly during digestion. Almonds contain a lot of vegetable protein and are rich in polyunsaturated fats. They also have an antioxidant effect.

Saffron is the precious pistil of Crocus sativus and has many health-promoting properties. Real saffron smells sweet and tastes slightly bitter. Saffron has anti-inflammatory, pain-relieving, antioxidant, anti-diabetic and mood-enhancing properties.

Honey has been considered a natural remedy for thousands of years and is known for its effect against pathogens such as viruses and bacteria. Manuka honey works best here – its high methylglyoxal content (MGO) makes it unique. In general, the darker the honey, the better, as the pinostrobin content is then higher.

Eggs are a great source of protein and have a firm place in a species-appropriate diet. They are a good source of healthy omega-3 fatty acids and contain numerous vitamins, such as vitamins A, B, D and E. (Please note: animal products are only species-appropriate if the animal has also been kept and fed in a species-appropriate manner.

Berries help to build up our protective barriers. Their polyphenol content has an anti-inflammatory effect and the secondary plant substances they contain have an antioxidant effect. They are also the epitome of summer and their bright color on the plate ensures a good mood.
