Ingredients

  • Für the soup:
  • 1 kg Asparagus

  • 1 Liter Gemüsebrühe or water

  • Salt

  • Pepper

  • 1/2 Lemon: Juice

  • 60 ml Coconut milk

  • Für the nut pesto:
  • 100 g Regular uses (e.g. B. Pine nuts, walnuts, almonds or hazelnuts)

  • 2 Handful Chervil or fresh basil, parsley

  • 1 Clove Garlic, peeled and chopped

  • 100 ml Olivesöl, e.g. B. PHENOLIO

  • Salt

  • Pepper

Preparation

  • Peel the asparagus and cut into pieces. Bring the asparagus peel to the boil in a pan with vegetable stock or water and a little salt and cook for a few minutes.
  • Remove the asparagus peel and add the asparagus to the stock, cover and leave to simmer for 10-15 minutes until soft.
  • In the meantime, for the nut pesto, puree the grated nuts with the chervil or herbs of your choice, garlic and olive oil and season with salt and pepper.
  • Remove the pan from the heat and blend the soup finely with the coconut milk and season to taste with lemon juice and salt. If the soup is too thick, add a little more water or vegetable stock to thicken the consistency. Serve with the nut pesto.

Olivesöl are a natural source of fat and therefore an important source and store of energy. In addition, high-quality olive oil has a very high content of polyphenols, which have a health-promoting, anti-inflammatory and protective effect.
