Ingredients

  • French fries
  • 1 kg Süßkartoffel

  • 4 Garlic cloves

  • 1 TL Paprika powder

  • 4 EL PHENOLIO olivesöl

  • Salt

  • Mayonnaise
  • 1 Yolk

  • 1 Spritzer Lemon juice

  • 200 ml PHENOLIO olivesöl

  • Salt

Preparation

  • Preheat the oven to 180° C fan oven.
  • Peel the sweet potatoes and cut into approx. 1 cm thick, even sticks.
  • Peel the garlic cloves and finely chop together with the paprika powder and olive oil.
  • Place the sweet potato fries on a baking tray lined with baking paper, pour the garlic oil over them and mix well. Spread the sweet potatoes on the tray and bake in the oven for approx. 20 minutes. Open the oven briefly every 5 minutes or so to allow the moisture to escape and make the fries crispier. Turn once after approx. 10 minutes.
  • In the meantime, whisk the egg yolk with a dash of lemon juice and salt in a tall bowl using a hand blender. Slowly add the oil in a fine stream and mix until the ingredients have combined to form a creamy mayonnaise. Season to taste with salt.

Süßkartoffeln are a tuberous vegetable and are rich in beta-carotene, which the body needs to produce vitamin A. We need vitamin A for our skin, eyes, immune system and cell protection. However, for this to be soluble, it should be consumed with a little fat. The sweet potato also contains plenty of vitamin E and fiber.

Garlic is also known as a natural antibiotic. It also has numerous positive effects on our health, which is why it can be used a lot.

Paprika as a nightshade vegetable is one of the most abundant vegetables. Red peppers in particular have a high vitamin C and beta-carotene content. Mild sweet peppers contain capsaicinoids, similar to chili peppers. These are responsible for the spicy taste of chili peppers. In mild peppers, however, the pungent effect does not develop in the mouth. But the „mild“ capsaicinoids also have a metabolism-enhancing effect in the digestive tract.

Olivesöl are a natural source of fat and therefore an important source and store of energy. PHENOLIO rounds off the dish with its fresh, fruity and tangy flavor. It also has a very high content of polyphenols, which have a health-promoting, anti-inflammatory and anti-inflammatory effect.

Eggs are a great source of protein and have a firm place in a species-appropriate diet. They are a good source of healthy omega-3 fatty acids and contain numerous vitamins, such as vitamins A, B, D and E. (Please note: animal products are only species-appropriate if the animal has also been kept and fed in a species-appropriate manner.

Lemons have a high content of vitamins, especially vitamin C, trace elements and secondary plant substances. They also activate liver enzymes that can help us detoxify.
