Ingredients

  • Waffle batter
  • 4 Eggs

  • 100 g ground almonds (blanched)

  • 100 g Chestnut flour

  • 2 EL Cashew butter or almond butter (approx. 100 g)

  • 100 ml Sparkling water

  • Süße variant: 1 pinch of vanilla pulp

  • Spicy variant: 1 hefty pinch of salt

  • Compote
  • 100 g fresh cranberries

  • 1 Bulb (approx. 150 g)

  • 150 ml Water

  • 1 gestr. TL Cinnamon

  • Cashew cream
  • 50 g Cashews (soaked)

  • 100 ml Water

Preparation

  • For the waffle batter, mix the eggs in a bowl;Mix the almonds, chestnut flour, nut butter and vanilla paste in a bowl using a whisk. Add enough sparkling water to make a thick batter.
  • For the compote, quarter the pear, remove the core and cut into pieces. Heat the pear together with the cranberries, water and cinnamon in a small pan and simmer until the cranberries and pear are cooked.
  • For the cashew cream, add the cashews.Soak the cashew nuts in cold water for 2 hours or overnight. Discard the soaking water and blend the cashew nuts very finely with 100 ml water. If the cream is too firm, add a little more water. The cashew cream will keep in the fridge for approx. 5 days.
  • Bake the waffles one after the other in the waffle iron and serve with the compote and cashew cream.

Notes

  • Tip: The waffles can also be prepared as a savoury version. Instead of vanilla, add a strong pinch of salt to the batter and enjoy with avocado, fried egg and herbs, for example.
