4 Eggs
approx. 250 g MANUKA honey, according to taste
1 Vanilla bean
450 g Haselnüsse (one half coarse and one half coarse);half coarsely and half finely ground)
50 g Walnuts, roughly chopped
1 Lemon, including the zest
1 Orange, of which the zest
1 EL Ginger, finely chopped
2 TL Gingerbread spice
1 TL span class=""wpzoom-rcb-ingredient-name"">Cinnamon
1 Prise Salt
100 g dark chocolate
Preparation
- Whisk the eggs, honey and scraped vanilla seeds until the mixture has roughly doubled in size.
- Mix in the nuts, lemon and orange zest, ginger, gingerbread spice, cinnamon and a pinch of salt and stir well. Cover the dough and leave to rest in a cool place, ideally overnight.
- Preheat the oven to 200° C (fan oven).
- Shape the dough with wet hands into small, approx. 30 g balls and place on a baking tray lined with baking paper. Press the balls flat. Leave a bit of space between the gingerbread balls.
Bake in the preheated oven for 12-15 minutes until light brown. The gingerbread should not be completely cooked when tested with a wooden stick. Switch off the oven and leave the gingerbread to cool slightly with the door open. With the oven door open, the gingerbread will still rise a little and therefore remain soft on the inside. - When the gingerbread has cooled completely, it can be coated with melted dark chocolate. To do this, chop the chocolate and melt in a bain-marie or slowly in a small saucepan.
To glaze the underside of the gingerbread with chocolate, gradually dip the underside of the gingerbread into the chocolate, remove and place the chocolate side on a sheet of baking paper. Leave to cool until the chocolate has hardened.
Notes
- Tip: If you want to make the gingerbread spice mix yourself, you can use cinnamon, cloves, allspice, coriander seeds, mace, cardamom seeds and star anise in powdered or ground form.

Manuka honey works best here – its high methylglyoxal content (MGO) makes it unique. In general, the darker the honey, the higher the pinostrobin content. Honey should not be heated for too long, as the beneficial substances are otherwise quickly destroyed.
Vanilla is the fermented and dried fruit capsule of the vanilla orchid. Strictly speaking, vanilla is part of the flower. Edible flowers can be used for cooking, look beautiful and summery and lift the mood. Vanilla can have a positive effect on cortisol sensitivity. It also has a mood-enhancing, aphrodisiac, invigorating, relaxing, muscle-strengthening, metabolic and digestive effect.
Hazelnutsüsse are rich in vitamins (B, E) and provide important minerals. They have a positive effect on cholesterol levels, the heart, blood vessels and circulation, can improve memory and lower cholesterol levels.

It is particularly good for treating digestive problems, pain and colds. In addition, its intense flavor makes you feel full sooner.
Dark chocolate: Chocolate with a cocoa content of over 75% can help to normalize energy levels. The high serotonin content has a mood-lifting effect and promotes hormone regulation.
