Chicorée orange salad

Light, quick and refreshing: Our species-appropriate chicory and orange salad impresses with its sweet and tangy taste and is also a real vitamin bomb.

Ingredients

  • 4 Chicorée

  • 2 Oranges

  • 2 EL Walnüsse

  • 2 EL bright balsamic vinegar

  • 1 TL MANUKA Honig

  • 1 Prise Salt

  • 4 EL PHENOLIO olivesöl

Preparation

  • Cut the chicory in half, remove the stalk and roughly chop the individual leaves.
    Fillet the oranges, reserving the juice.
  • Roast the walnuts in a pan without fat until they start to smell fragrant.
  • Mix the orange juice, vinegar, honey and salt in a large bowl using a whisk. Gradually stir in the olive oil and season the dressing to taste.
  • Mix the chicory leaves and orange segments with the dressing, leave to infuse for a few minutes and serve with the walnuts.

    Chicorée: In addition to many vitamins and minerals, chicory is rich in bitter substances and therefore has a beneficial effect on digestion. The bitter substances also appear to have a blood pressure-lowering effect.

    Oranges have an anti-inflammatory and antioxidant effect, strengthen the immune system, prevent high blood pressure and strengthen bones and teeth.

    Olivesöl are a natural source of fat and therefore an important source and store of energy. In addition, high-quality olive oil has a very high content of polyphenols, which have a health-promoting, anti-inflammatory and protective effect.

    Vinegar has a probiotic effect. However, it is important to make sure it is of good quality - vinegar should not have been heated, otherwise it will not have a probiotic effect.

    Honey has been considered a natural remedy for thousands of years and is known for its effect against pathogens such as viruses and bacteria. Manuka honey works best here – its high methylglyoxal content (MGO) makes it unique. In general, the darker the honey, the better, as the pinostrobin content is then higher.

    Walnuts contain many vitamins and healthy fats. They have an antioxidant effect, help with diabetes and lower cholesterol levels, are healthy for the digestion, heart and brain and increase the ability to concentrate.
