Simply made and yet really delicious: saffron pear with warm chocolate sauce. Particularly aromatic thanks to saffron, honey and lemon. And suitable for RESET.

Saffron pear with warm chocolate sauce

2 Pears (not too ripe)
0.1 g Safranfäden
1 EL Lemon juice
1 Stück Lemon peel
2 EL Honey
400 ml Water
100 ml Weißwein
70 g coarsely chopped dark chocolate
70 ml Coconut milk
Preparation
- The pears Peel, halve and remove the core and drizzle immediately with a little lemon juice.
- Peel off a 1-2 cm piece of lemon peel with a peeler.
- In a pot of water, white wine, saffron juice and lemon zest, bring to the boil and then turn down the heat so that it no longer boils. Add the pears and cook for 7 – 10 minutes. Test with a sharp knife to see if they are soft. Remove the pan from the heat and leave the pears to cool in the stock.
- Just before serving, chocolate and coconut milk in a metal bowl over a bain-marie until melted and stir well.
- Serve the pears with the warm chocolate sauce.
Notes
- This goes well with coconut cream or coconut yogurt ice cream
- Tip: The white wine can also be omitted, but use more water and a squeeze of lemon juice.
