1/2 Hokkaido Kürbis (approx. 300 g)
2 Carrots

1 Süßpotato (approx. 300 g)
1 Gemüsezwiebel
1/2 Pole Lemongrass
1 EL Cocosöl
1 EL Yellow curry paste
1 EL Turmeric, chopped (alternatively 1 gestr. Tbsp turmeric powder)
1 EL Ginger, minced

ml Coconut milk 50 g Cashews
- Für the cauliflower rice:
1 small cauliflower (approx. 800 g)
2 EL Water
0.1 g Safran
1 EL PHENOLIO Olivenöl

Preparation
- Clean the vegetables such as pumpkin, carrots and leek and cut into pieces of approximately the same size. Peel the sweet potato and cut into chunks. Peel the onion and cut into wedges. Remove the hard outer leaves of the lemongrass and cut the soft part into fine rings.
- Heat the coconut oil in a wok or large pan and fry the curry paste together with the turmeric and lemongrass until everything starts to smell fragrant. Add the vegetables, sauté briefly on all sides and pour in the coconut milk. Leave to simmer gently until the vegetables are cooked.
- In the meantime, toast the cashew nuts in a pan without fat until they are lightly browned.
- For the saffron cauliflower rice, wash the cauliflower and grate on a grater. Heat 2 tablespoons of water in a pan, leave the saffron to infuse for 1-2 minutes and add the cauliflower. Cook over a medium heat for 5-8 minutes.
- Season the cauliflower rice with olive oil, salt and pepper and serve with the curry and a wedge of lime.

Olivesöl are a natural source of fat and therefore an important source and store of energy. In addition, high-quality olive oil has a very high content of polyphenols, which have a health-promoting, anti-inflammatory and protective effect.
