30 g Pistachio kernels
1 half Orange
1 half chili pepper
2 EL Olivesöl e.g.B. PHENOLIO
1 strong pinch of salt, pepper
2 courgettes
16 shrimps
2 cloves of garlic
1 tsp olivesöl e.g. PHENOLIO
1 sip of white wine to quench your thirst

4 handfuls of herbs (mint, rocket, basil, lemon balm...)
Preparation
- Wash the mint and separate the leaves from the stems.
- ½ Grate a teaspoon of orange zest and squeeze the juice from the orange.
- Deseed and roughly dice the chilli pepper.
- Blend the mint leaves with the pistachios, orange zest, orange juice, chilli pepper, olive oil, salt and pepper.
- Turn the zucchinis into spaghetti using a spiral cutter.
- Wash and clean the prawns and devein them if they still have their shells. To do this, make a small incision in the back of the prawns from head to tail and pull out the intestines. Rinse out with a little water.
- Peel and finely dice the garlic.
- Pick the herbs and chop roughly.
- Sauté the prawns and garlic with oil in a pan for 2-3 minutes on all sides.
- Add the vegetable spaghetti and a generous pinch of salt, fry briefly and deglaze with white wine.
- Let the zucchini spaghetti collapse briefly, but it should still be firm to the bite.
- Season the pasta with salt and pepper, mix in the chopped herbs and serve with the mint pesto. Drizzle a little olive oil over the top.
