Ingredients

  • 1 Vanilla bean

  • 200 g mixed berries

  • 2 Eggs

  • 100 ml Coconut milk

  • 2 EL Coconut flour

  • 1 Pinch Salt

  • 1 EL Coconut fat

Preparation

  • Cut the vanilla pod in half lengthwise and scrape out the vanilla pulp with the back of a knife.
  • Wash and pick the berries. Chop the strawberries if necessary.
  • Whip the eggs in a bowl and mix with the coconut milk. Add the vanilla paste, coconut flour and a small pinch of salt and stir.
  • Melt some coconut oil in a frying pan and place small pancakes in the pan using a ladle. Turn after 2-3 minutes until golden brown on both sides. Do the same with the remaining batter until all the pancakes are cooked. Serve with the berries.

Notes

  • TIP: For blueberry pancakes, fold the blueberries into the batter and bake the pancakes a little at a time.

However, it requires significantly more liquid than normal flour and excessive amounts can make the dough dry.
