100 g Dates, pitted
100 ml Coconut milk
4 Eggs
200 g Almonds, ground

2 cl Rum, optional
1 Prise Salt
Preparation
- Line a 26 cm baking tin with baking paper. Preheat the oven to 180°C top/bottom heat.

- Separate the eggs and beat the egg yolks with a hand mixer. Slowly stir in the date and coconut puree and the melted chocolate.
- Add the ground almonds, cocoa and chocolate.cocoa, optional rum and a small pinch of salt into the chocolate mixture.
- Beat the egg whites until stiff and gradually fold into the chocolate mixture.
- Pour the dough into the prepared springform tin, spread the cherries over the dough and bake for approx. 25-30 minutes in the middle of the oven. Carry out a cake test. Then remove from the oven, leave to cool on a cake rack and remove from the tin.
Notes
- TIP: Can also be prepared without cherries. Alternatively, sprinkle the dough with flaked almonds before baking.
