Cherry and chocolate cake

A simple recipe for a moist chocolate cake with cherries. Gluten-free and RESET suitable.

Ingredients

  • 200 g Dark chocolate

  • 300 g Cherries (sour cherries, fresh or unsweetened from the jar)

  • 100 g Dates, pitted

  • 100 ml Coconut milk

  • 4 Eggs

  • 200 g Almonds, ground

  • 1 EL Cocoa

  • 2 cl Rum, optional

  • 1 Prise Salt

Preparation

  • Line a 26 cm baking tin with baking paper. Preheat the oven to 180°C top/bottom heat.
  • Break the chocolate into pieces and melt over a bain-marie, stirring occasionally. Pit the cherries – or, if using cherries from a jar, drain them. Puree the dates together with the coconut milk.
  • Separate the eggs and beat the egg yolks with a hand mixer. Slowly stir in the date and coconut puree and the melted chocolate.
  • Add the ground almonds, cocoa and chocolate.cocoa, optional rum and a small pinch of salt into the chocolate mixture.
  • Beat the egg whites until stiff and gradually fold into the chocolate mixture.
  • Pour the dough into the prepared springform tin, spread the cherries over the dough and bake for approx. 25-30 minutes in the middle of the oven. Carry out a cake test. Then remove from the oven, leave to cool on a cake rack and remove from the tin.

Notes

  • TIP: Can also be prepared without cherries. Alternatively, sprinkle the dough with flaked almonds before baking.

Dates are a natural source of sweetness and belong to the drupe family. They are a fast source of energy for the muscles and brain. The amino acid tryptophan it contains stimulates the production of serotonin and melatonin, which promotes a good night's sleep. Dates are also rich in vitamins and minerals and have an antioxidant effect. The reddish color comes from beta carotene (i.e. provitamin A), which can regulate cell growth in the body.

Coconut is a very good source of energy.
