4 Salmon fillets 2 big sweet potatoes
1 Porree
2 EL Olivesöl, e.g. B. PHENOLIO
1 Red onion, chopped
2 Garlic cloves, chopped
1 TL Ginger, chopped
1 EL Curry
400 ml Coconut milk
Salt
Pepper
2 EL Walnüsse
Preparation
- Preheat the oven to 200° C.
- Rinse the salmon fillets with cold water and pat dry. Peel the sweet potatoes and slice or slice thinly. Clean and slice the leek into rings and spread the leek on the bottom of an ovenproof dish. Alternatively, use a deep baking tray.
- Place the salmon fillets on the leek and spread the slices of sweet potato evenly over the salmon.
- Heat 2 tbsp olive oil in a pan and sauté the chopped onion, garlic, ginger and curry until fragrant. Deglaze with the coconut milk and leave to simmer for a few minutes. Season with salt.
- Finely chop the walnuts. Pour the curry and coconut milk mixture over the sweet potatoes and sprinkle the casserole with the walnut crumbs.
- Bake in the oven for approx. 35-45 minutes until the fish is cooked and the sweet potatoes are lightly browned.
