Ingredients

  • 2 large sweet potatoes
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika powder
  • 1 teaspoon ground turmeric
  • 2 teaspoons dried thyme
  • 1 teaspoon ground black pepper
  • 1 leek (cut into rings)
  • 1 tablespoon butter
  • 450g fresh salmon (frozen fish is fine as well)
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried oregano
  • 2 tablespoons capers
  • 1 tablespoon fresh parsley (chopped)

Instructions

  • Preheat the oven to 200°C.
  • Rinse the salmon fillets with cold water and pat dry. Peel the sweet potatoes and slice them thinly, either with a mandolin or a knife. Clean the leek and slice it into rings, then spread the leek evenly at the bottom of an ovenproof dish. Alternatively, you can use a deep baking tray.
  • Place the salmon fillets on top of the leek and evenly distribute the sweet potato slices over the salmon.
  • Heat 2 tablespoons of olive oil in a pan and sauté the chopped onion, garlic, ginger, and curry powder until fragrant. Deglaze with coconut milk and simmer for a few minutes. Season with salt.
  • Finely chop the walnuts. Pour the curry-coconut milk mixture over the sweet potatoes and sprinkle the casserole with walnut crumbs.
  • Bake in the oven for about 35-45 minutes until the fish is cooked through and the sweet potatoes are lightly browned.
