Salmon-Sweet Potato Casserole

Instructions
- Preheat the oven to 200°C.
- Rinse the salmon fillets with cold water and pat dry. Peel the sweet potatoes and slice them thinly, either with a mandolin or a knife. Clean the leek and slice it into rings, then spread the leek evenly at the bottom of an ovenproof dish. Alternatively, you can use a deep baking tray.
- Place the salmon fillets on top of the leek and evenly distribute the sweet potato slices over the salmon.
- Heat 2 tablespoons of olive oil in a pan and sauté the chopped onion, garlic, ginger, and curry powder until fragrant. Deglaze with coconut milk and simmer for a few minutes. Season with salt.
- Finely chop the walnuts. Pour the curry-coconut milk mixture over the sweet potatoes and sprinkle the casserole with walnut crumbs.
- Bake in the oven for about 35-45 minutes until the fish is cooked through and the sweet potatoes are lightly browned.
