Sweet potato curry with chard and oven-baked tomatoes

Ingredients

  • 10 Cherry tomatoes

  • 1 EL White vinegar

  • 1/2 TL coarse sea salt

  • 2 Süßpotatoes (approx. 400 g)

  • 250 g Mangold

  • 1 Piece Ginger (approx. 2 cm)

  • 1 Chunks Turmeric (fresh approx. 2 cm, dried 1 tsp)

  • 1/2 Pole Lemongrass

  • 2 Shell

  • 1 EL Cocosöl

  • 400 ml Coconut milk

  • Pepper, salt

Preparation

  • Preheat the oven to 180 °C top/bottom heat.
  • Wash and halve the tomatoes. Place on a baking tray lined with baking paper with the cut sides facing upwards and sprinkle with white vinegar and coarse salt. Bake in the oven for approx. 10 minutes until the tomatoes are wrinkly.
  • Peel the potatoes and cut into approx. 2 cm pieces. Wash the chard and separate the leaves from the stalks. Cut the stems into small pieces and roughly chop the leaves according to size.
  • Peel the shallots, turmeric and ginger and finely dice. Cut off the hard base of the lemongrass and cut the rest into fine rings.
  • Heat the coconut oil in a wok or deep pan and fry the shallots, turmeric, ginger and lemon grass for 2-3 minutes until fragrant. Add the potatoes and sauté briefly.
  • Pour in the coconut milk and cook for approx. Cook for about 15 minutes until the sweet potatoes are almost cooked. Then add the chard stalks for a further 2-3 minutes and finally fold in the chard leaves and allow to collapse. Season the curry with salt to taste and serve with the oven tomatoes and freshly ground pepper.

Notes

  • Tip: Any vegetables can be prepared as a quick curry. For a little extra heat, use chili pepper.

Turmeric is available fresh or dried. It has an anti-inflammatory, antioxidant and anti-rheumatic effect. Turmeric unfolds its full effect in combination with black pepper and a little fat, as this is the best way to absorb the ingredients.

Lemon grass gets its characteristic scent and cleansing effect from the citronella it contains. It promotes digestion and binds fats and cholesterol. It also has an antibacterial and antifungal effect. It is suitable for cooking as well as for teas.

Mangold is very similar to spinach. Its chlorophyll has a detoxifying, digestive, anti-inflammatory and antihypertensive effect and can counteract infections.

Coconut milk is a good source of energy.
