Chicory salad with walnuts and mandarins

Ingredients
2 Chicoree
3 Mandarins
4 EL Olivesöl, e.g. B. PHENOLIO
1 TL Honey, e.g. B. MANUKA
Salt (to taste)

1/2 Cup Walnut kernels
Preparation
- Wash the chicory salad heads thoroughly, remove the stalk and cut the chicory into fine strips.
- Peel two mandarins and cut into pieces. Cut the third mandarin in half and squeeze out the juice. Mix the mandarin juice, olive oil, honey, salt and pepper to make a dressing, mix with the chicory and mandarins and leave to infuse for a few minutes.
- In the meantime, roughly chop the walnuts and carefully toast them in a pan without oil until they start to smell fragrant.
- Once the salad is a little more mature, season again with salt and pepper and serve with the walnuts.
