Ingredients

  • 1 small watermelon (approx. 1 kg)

  • 2 Shells

  • 1 TL Honey e.g.B. MANUKA

  • 10 Pecanüsse

  • 1 EL Olivesöl e.g.B. PHENOLIO

  • 4 EL Balsamic vinegar

  • 1 A strong pinch of salt, pepper

Preparation

  • Wash the radicchio and cut into eighths.
  • Cut the watermelon into 3 cm cubes.
  • Peel the shallots and cut into strips.
  • Fry the radicchio slices in a pan with the olives on both sides until lightly browned.
  • Remove the radicchio from the pan.
  • Add the shallots to the pan and fry until translucent.
  • Add the pecans and deglaze with balsamic vinegar
    .
  • Stir in the honey, salt and pepper.
  • Put the radicchio back into the pan and
    let it steep briefly.
  • Serve the radicchio with the watermelon and
    balsamic sauce.

    Radicchio is a bitter, purple-red leaf lettuce from the chicory family that is rich in antioxidants, fiber and vitamin K. Its bitter substances aid digestion and make it particularly healthy. Radicchio is versatile, whether raw in a salad or briefly fried as an aromatic side dish.

    Pecans are rich in healthy unsaturated fats, antioxidants and vitamin E, which support the cardiovascular system. They also provide important minerals such as magnesium and zinc and are an excellent source of vegetable protein. Their sweet and nutty aroma makes them a popular ingredient in savory and sweet dishes.

    Watermelons consist of around 90% water and are therefore an excellent, low-calorie refreshment on hot days. They are rich in vitamin C, vitamin A and the antioxidant lycopene, which protects against cell damage. Watermelons also promote hydration and support the body's fluid balance thanks to their high water content.
