1 small watermelon (approx. 1 kg)
2 Shells
1 TL Honey e.g.B. MANUKA
10 Pecanüsse
1 EL Olivesöl e.g.B. PHENOLIO
4 EL Balsamic vinegar
1 A strong pinch of salt, pepper
Preparation
- Wash the radicchio and cut into eighths.
- Cut the watermelon into 3 cm cubes.
- Peel the shallots and cut into strips.
- Fry the radicchio slices in a pan with the olives on both sides until lightly browned.
- Remove the radicchio from the pan.
- Add the shallots to the pan and fry until translucent.
- Add the pecans and deglaze with balsamic vinegar
. - Stir in the honey, salt and pepper.
- Put the radicchio back into the pan and
let it steep briefly. - Serve the radicchio with the watermelon and
balsamic sauce.
