Oven-baked spaghetti recipes are a must in the fall. This recipe for spaghetti squash from the oven is not only simple and delicious, but also vegan, gluten-free and suitable for RESET.

Ingredients

  • 2 small – medium-sized spaghetti bites

  • 2 Garlic cloves

  • 4 EL Olivenöl

  • 8-12 Strike thyme

  • Salt, pepper

  • 1 bundle basil (approx. 10 stems)

  • 2 EL Pine nuts (approx. 50g)

Preparation

  • Preheat the oven to 180°C convection.
  • Cut the cucurbits in half lengthwise using a large knife. Scoop out the seeds with a spoon. Peel the garlic and cut into thin slices. Garnish each half of the pumpkin with a little olive, garlic, thyme sprigs, salt and pepper and place on a baking tray with the cut sides facing up. Depending on the size of the slices, bake in the oven for 20-30 minutes until the flesh is cooked but still firm to the bite.
  • In the meantime, add the basil together with 2 tbsp of olives.olive oil, a strong dash of lemon juice and salt to make a pesto. (Tender stems can also be used.)
  • Sauté the pine nuts in a pan without fat until they start to smell fragrant.
  • Remove the squash from the oven and scrape out the flesh with two forks. This creates the „spaghetti“. Serve with the pesto and pine nuts and season with salt and pepper.

Notes

  • Tip: Eat the “spaghetti“ with your favorite pasta sauce or lukewarm as a salad.
  • Variant: Halve the butternut or Hokkaido squash and cook in the oven like the spaghetti squash.
