Ingredients

  • 500 g Berries

  • 6 Eggs

  • 3 ripe bananas

  • 1 EL Honey (the riper the bananas, the less honey is needed)

  • 1 Zest of lemon

  • 1 Prise Salt

  • 1 TL Cinnamon

  • 400 g ground almonds (or hazelnuts, walnuts…)

  • 26 cm Springform

  • Baking paper

Preparation

  • Preheat the oven to 165 °C fan. Line the springform with baking paper. Wash and pick the berries.
  • Whip the eggs in a mixer bowl and stir together with the honey until frothy. Mash the bananas with a fork and add to the eggs.
  • Lemon zest, a pinch of salt.strong>salt, cinnamon and the ground nuts.
  • Pour the batter into a springform tin lined with baking paper and top with the berries.
  • Bake the cake in a hot oven for 35 minutes. Then remove from the oven and leave to cool on a cooling rack

Foods rich in serotonin such as bananas, eggs and nuts can regulate hormone levels and therefore have a positive effect on sleep and mood.
