375 ml Water
250 ml Coconut milk
1 Cinnamon stick
2 cloves
1 g ground cardamom
1 g ground ginger
0.5 g black pepper
7 g Honey
2 g Vanilla extract
1 bag black tea
Preparation
- Bring the water to the boil in a small pan. Add the cinnamon stick, cloves, cardamom, ginger and optional pepper. Allow to simmer gently for 5–10 minutes so that the aromas can fully develop.
- Remove the pan from the heat. Add the tea bags and leave to infuse for 3–5 minutes. Rooibos can steep a little longer if you prefer the herbal version.
- Remove the tea bags (and coarse spices, if desired). Add the coconut milk and heat gently. Then stir in the collagen powder until it has completely dissolved.
- Add honey and vanilla extract to taste. Pour into cups and best enjoyed warm.
