Ingredients for the Sweet Potato Burger
- 2 sweet potatoes
- 4 zucchini patties
- 1 avocado
- ½ red onion
- 1 tomato
- Arugula
- Tahini sauce
- Salt
- Pepper
- Paprika powder
- Olive oil
- Sesame seeds
Method
- Slice the sweet potatoes into ~1 cm thick rounds.
- Brush both sides with a mix of oil and spices, then pan-fry for ~10 minutes until tender but still crisp at the edges.
- Slice tomato, onion and avocado thinly.
- Pan-fry the zucchini patties.
- Assemble: sweet potato slice as base, a teaspoon of tahini sauce, patty, avocado, tomato, onion and arugula.
- Finish with another sweet potato slice.
- Sprinkle sesame seeds on top and enjoy!
