Ingredients
- 500 g watermelon (ripe, deseeded, cubed)
- 150 g feta cheese (crumbled)
- 1 handful fresh mint leaves (chopped)
- 2 tbsp quality olive oil
- 1 tbsp fresh lime juice
- Salt and freshly ground pepper to taste
- Optional: toasted pine nuts, arugula, or 1 small red onion, thinly sliced
Instructions
