This homemade granola is both delicious and full of wholesome ingredients. Walnuts, almonds and coconut chips combine with aromatic Manuka honey and warm spices to create a crunchy treat that pairs perfectly with yoghurt or fresh fruit. Ideal for a nourishing breakfast or a snack in between.

Ingredients

  • 100 g coarsely chopped almonds
  • 50 g chopped walnuts
  • 50 g unsweetened coconut chips
  • 2 tsp melted coconut oil
  • 1 tbsp Manuka honey
  • 1 pinch of salt
  • 1 tsp cinnamon
  • 1 tsp cardamom powder

Method

  • Preheat the oven to 180 °C.
  • Roughly chop the nuts, add to a large bowl and mix with cinnamon, cardamom and a pinch of salt.
  • In a small bowl, whisk together coconut oil and honey.
  • Pour the honey–oil mix over the nuts and combine well.
  • Spread the mixture on a baking tray lined with parchment.
  • Bake for 20–25 minutes, stirring halfway so everything browns evenly and stays crisp.
  • Tip: For a quicker version, use an air fryer: 10 minutes at 180 °C (fan 160 °C), stirring several times.
  • Let cool completely. Serve with yoghurt and fresh fruit.
