Ingredients
- 100 g coarsely chopped almonds
- 50 g chopped walnuts
- 50 g unsweetened coconut chips
- 2 tsp melted coconut oil
- 1 tbsp Manuka honey
- 1 pinch of salt
- 1 tsp cinnamon
- 1 tsp cardamom powder
Method
- Preheat the oven to 180 °C.
- Roughly chop the nuts, add to a large bowl and mix with cinnamon, cardamom and a pinch of salt.
- In a small bowl, whisk together coconut oil and honey.
- Pour the honey–oil mix over the nuts and combine well.
- Spread the mixture on a baking tray lined with parchment.
- Bake for 20–25 minutes, stirring halfway so everything browns evenly and stays crisp.
- Tip: For a quicker version, use an air fryer: 10 minutes at 180 °C (fan 160 °C), stirring several times.
- Let cool completely. Serve with yoghurt and fresh fruit.
