Pumpkin gnocchi with sage
Gnocchi with a difference – healthy and even tastier than usual!

400 g Hokkaido pumpkin (cored)
2 Eggs
200 g Chestnut flour
1 strong pinch Muscat nut, grated
½ TL Salt
1 Handful Sage leaves
2 EL PHENOLIO olivesöl

Preparation
- Preheat the oven to 200° C fan oven.
- Wash the squash and cut into large pieces. Line a baking tray with baking paper and bake the squash in the oven for approx. 20-30 minutes until it is soft.
- Afterwards, allow the squash to cool down a little and then puree. Add the eggs, chestnut flour, nutmeg and salt, mix well and knead into a homogeneous dough. If necessary, add a little more chestnut flour until you have a dough that is easy to shape with your hands.
- Take off a little dough at a time, roll into a roll about 2 cm thick and cut off gnocchi about 2 cm long with a knife. Shape the gnocchi with your hands and use the tines of a fork to make the typical gnocchi grooves.
- Bring a large pan of salted water to the boil and cook the gnocchi for 3-5 minutes until they float to the surface. The water should only boil, not simmer. Remove the gnocchi with a slotted spoon, drain and set aside.
- Heat the olive oil in a large pan, add the sage and fry slowly. After 2-3 minutes, add the finished gnocchi and fry, turning occasionally, until the sage leaves are crispy. Season to taste with freshly ground pepper and salt.
