Species-appropriate cheesecake with currants
The recipe for a healthy cheesecake. Easy to make, moist and creamy. Perfect for any occasion.

200 g ground almonds
3 EL Coconutöl
1 Egg
1 small pinch Salt

800 g Coconut yogurt
6 Eggs
1 Pod Vanilla pulp
1 Lemon (juice and peel)
3 EL MANUKA honey
300 g Currants
Preparation
- Preheat the oven to 150°C convection.
- Für the dough the ground almonds, coconut oil, an egg and salt and knead into a dough with your hands. If the dough is too dry, add a little ice-cold water. Line the base of a springform tin with baking paper and brush the sides with a little coconut oil. Press the dough evenly into the tin with your hands and press the sides down to a height of approx. 3 cm.
- Pre-bake the dough in the oven for 10-15 minutes. Then turn the oven up to 165°C.
- Für the coconut yoghurt mixture in a bowl together with the coconut yoghurt.strong>eggs, vanilla paste, lemon juice, zest and honey in a bowl until everything is blended.
- Pour carefully onto the pre-baked base and bake in the oven for around 50 minutes until the mixture has set. Then open the oven slightly and allow the cake to cool completely in the oven and, if necessary, cool in the fridge. Garnish with currants.
